These Air Fryer Breakfast Potatoes with peppers and onions are the best way to start the day! Crispy potatoes on the outside, tender and fluffy on the inside, these well-seasoned potatoes are golden, flavorful, and hot. I love that these air-fried potatoes can be made in less time than skillet potatoes because you don't need to babysit the pan constantly stirring to make sure the potatoes cook evenly.
This easy recipe is great year-round and can even be made during the week. The air fryer home fries use simple ingredients, so prep them the night before and toss them in the air fryer in the morning for a filling and hearty breakfast.
These air fryer potatoes are the perfect side dish to serve with most of your favorite breakfast foods. They pair perfectly with pancakes, scrambled eggs, bacon, french toast sticks, and omelets. This delicious recipe also makes a great side dish for savory entrees like roast chicken or salmon.

🛒Ingredients
- Baby red potatoes: You can substitute baby Yukon gold potatoes or even russet potatoes.
- Red bell pepper: You can substitute any color of bell pepper.
- Green bell pepper: You can substitute any color of bell pepper.
- Red onions: I like the flavor and color of red onion in this recipe but you can also use white, yellow, or sweet onion if necessary.
- Avocado oil: You can use any oil that you have on hand such as olive oil, vegetable oil or canola oil.
- Minced garlic
- Salt
- Italian seasoning: You can substitute a combination of oregano, thyme and basil if you don't have an Italian seasoning blend on hand.
- Scallions: You can also use chives or omit this completely, though it does add the perfect finishing touch to round out the flavors.

Instructions
In a large bowl, toss the diced potatoes with bell peppers and onions.
Toss the potatoes with the oil and seasonings, then place them in the air fryer basket.
Cook at 400 degrees F for 15-20 minutes until your crispy breakfast potatoes are golden brown.

One of my favorite ways to serve these potatoes is with a sunny side-up egg on top for a quick breakfast the whole family will love.
You can also make these delicious breakfast potatoes and use them as a base for a breakfast bowl. Just top the potatoes with scrambled eggs, some bacon bits, and a little salsa for a filling morning meal.

Variations
- Spicy - add chili powder, black pepper, or cayenne pepper to add some heat. Serve the cooked potatoes with your favorite hot sauce.
- Garlic -You can use 2 teaspoons of garlic powder in this recipe instead of fresh minced garlic.
- More onion - add 1-2 teaspoons of onion powder to the spice mix for even more onion flavor.
❄️Storage
Air Fryer Breakfast Potatoes can be stored in an airtight container in the refrigerator for 4-6 days or in the freezer for up to 4 months.
When reheating, use the air fryer. They will get soft if microwaved, but they still taste pretty good. I recommend reheating them in the air fryer for 5-7 minutes or until reheated through, to get that crispy result. They can be heated directly from a frozen state or thawed in the refrigerator first.
Top tip
With baby potatoes, you don’t have to chop them as much as large potatoes but you will have a variety of sizes. Some may only need to be halved while others will need to be cut considerably to match them in size. Do your best to have even-sized cut potatoes or they won’t cook evenly and some will be overly soft while others are still not quite done.
The peppers cook more quickly than the potatoes so they should be cut into larger pieces so that they can maintain a bit of texture. I tend to cut the onions slightly smaller than the peppers. Try to keep the peppers equal to each other in size so that they cook evenly in the air fryer.
Depending on the size of your air fryer, you may need to cook these breakfast potatoes in batches. While it may seem easier to put the whole batch of potatoes in at once, especially with a large air fryer, I recommend doing multiple batches for the best results. Make sure the potatoes are in a single layer and not piled on top of each other so that the potatoes can all get equally crispy and golden brown. Overcrowding the air fryer may cause the potatoes to cook unevenly and will certainly affect how well they color. If you don’t mind some pale, softer potatoes go ahead and throw them all in at once. Otherwise, be patient and do a couple of batches!
When checking for doneness I recommend poking several potatoes to make sure they are all equally cooked. If your potatoes are uneven in size make sure to check the largest ones so that you don’t end up serving or eating hard potatoes.

Ingredients
- 1 ½ pounds baby red potatoes cubed into 1” pieces
- 1 large red bell pepper largely diced
- 1 large green bell pepper largely diced
- ½ large red onion chopped
- 1 ½ Tablespoons avocado oil
- 2 teaspoons minced garlic
- 1 ½ teaspoons salt
- ¾ teaspoon Italian seasoning
- 1 Tablespoon scallions finely chopped
- Sunny side up egg optional garnish
Instructions
- Preheat your air fryer to 400 degrees Fahrenheit.
- In a large mixing bowl toss together the cubed potatoes, red bell pepper, green bell pepper and red onion.
- Drizzle on the avocado oil and toss to coat the vegetables.
- Sprinkle on the garlic, salt, and Italian seasoning and gently stir to coat everything evenly.
- Place a layer of potato mixture on the bottom of the basket, you may need to do multiple batches depending on the size of your air fryer, and cook for 15 to 20 minutes or until the potatoes are fork tender and golden brown.
- Once the potatoes are cooked through, sprinkle the scallions all over the mixture and serve hot topped with a sunny side up egg, optional.
