Air Fryer Breakfast Potatoes

Simple breakfast potatoes with a flavorful combination of spices.

Ingredients

  • 1 ½ pounds baby red potatoes cubed into 1” pieces
  • 1 large red bell pepper largely diced
  • 1 large green bell pepper largely diced
  • ½ large red onion chopped
  • 1 ½ Tablespoons avocado oil
  • 2 teaspoons minced garlic
  • 1 ½ teaspoons salt
  • ¾ teaspoon Italian seasoning
  • 1 Tablespoon scallions finely chopped
  • Sunny side up egg optional garnish

Instructions

  • Preheat your air fryer to 400 degrees Fahrenheit.
  • In a large mixing bowl toss together the cubed potatoes, red bell pepper, green bell pepper and red onion.
  • Drizzle on the avocado oil and toss to coat the vegetables.
  • Sprinkle on the garlic, salt, and Italian seasoning and gently stir to coat everything evenly.
  • Place a layer of potato mixture on the bottom of the basket, you may need to do multiple batches depending on the size of your air fryer, and cook for 15 to 20 minutes or until the potatoes are fork tender and golden brown.
  • Once the potatoes are cooked through, sprinkle the scallions all over the mixture and serve hot topped with a sunny side up egg, optional.
