🥣Instructions
Bake the frozen french fries in the oven according to the package directions. To make sure you get crispy fries, make sure to spread them on a single layer on a baking sheet. Cook them until they are golden brown
While the french fries are cooking, cook the chorizo sausage in a skillet over medium heat. Drain the excess fat from the meat and set aside. You can also use a paper towel to absorb the excess grease from the pan.
Wipe the skillet clean. In the same skillet, heat the nacho cheese sauce over medium until it is a pourable cosistency. Keep the sauce warm until the fries are ready.
Transfer the crispy fries to a serving platter and top with the cheese sauce, chorizo and pico de gallo. Garnish the fries with the sour cream and cilantro or green onions. Serve immediately.
👩🏾🍳Substitutions
- Chorizo - I used beef chorizo for this recipe, but you can use traditional pork chorizo, chicken chorizo or even soyrizo. Another option would be to use a ground beef mixture cooked with taco seasoning in place of the chorizo.
- Cheese sauce - for this recipe, I used my homemade queso. You can use a storebought cheese sauce or sprinkle the fries with cheddar cheese when they are finished baking. Just return the fries to the oven for 1-2 minutes or until the cheese melts. When making recipes like this, I like to put cheese that I shred myself on top of the fries. It melts a lot better because it's not coated with anti-sticking agents.
- Vegetarian/Vegan - the beef hamburger can be replaced with a plant-based burger taco meat to make this vegan. You'd also need to make a vegan queso.
📝Variations
- Loaded fries - add black beans or refried beans, taco beef, chopped red and green bell pepper, fresh tomatoes and warm nacho cheese sauce. Guacamole would also be great on top of these fries.
- Nachos - if you want to have nachos instead, swap out the crispy frozen fries for tortilla chips. Add your favorite nacho toppings.

🍳Equipment
You need a large skillet to cook the chorizo and reheat the nacho cheese sauce. You'll also need a sheet pan to cook the fries. I line my sheet pan with silicone, but you can use parchment paper if thats what you prefer.
As an alternative, you can cook the fries in an air fryer so you're not heating up your whole kitchen. Just be sure to keep the fries in one layer in the air fyer basket and shale the basket at least once during cooking to make sure the fries cook evenly.
🥡Storage
These ingredients don't stand up well to refrigerating or freezing once the dish has been assembled. Only make what you can eat in one sitting.
✅Top tip
If you are not using crispy seasoned fries, you can toss plain french fries or homemade fries in a large bowl with chili powder, garlic powder and onion powder.
